Raw Vegan Breakfast Recipes + Video

Happy January!! To start off 2018 I made it one of my goals that I would eat a fully raw vegan diet for two weeks this month. So far, it’s amazing and I’ve made it past the 7 day mark! I thought after 7 days I would be falling apart but I finally so confident in my body it’s insane! I’m feeling so great that I wanted to share a few super easy, filling breakfast recipes for a raw day or just everyday!

Be sure to watch the video down below for the full

‘What I Eat in a Day Raw Vegan Challenge’!

🍉 Refreshing Watermelon Juice  🍉

This is my FAVORITE juice in the whole wide world! I made this one day on my last raw vegan challenge and have consistently used it as a staple breakfast everytime we get watermelon in the house!

What you’ll need:

-1 lime (juice from)

-1 cup of frozen strawberries

-1 cup of pineapple

-1 mini watermelon or half of a regular watermelon

-fresh mint and basil leaves (2)

Scoop out all of the watermelon, put it in the blender first, then add everything else and blend away for a good 20-30 seconds. *If you don’t have frozen fruit, use fresh but make sure to put ice in the blender to make it cold and refreshing~

🍍Classic Green Smoothie 🍌

I promise this one actually tastes good!! It’s imperative to have all the ingredients, especially the dates. This green smoothie is creamy and will definitely give you a full belly in the morning. 👍🏾

What you’ll need:

-3/4 cup of water

-1 or 2 frozen bananas

-1 peeled, fresh orange, or 1/3 cup of orange juice.

-1/2 cup of frozen pineapple

-2 dates

-1 cup of greens (spinach, kale, lettuce)

-2 TBS of  seeds (hemp, flax, chia)

-1 tsp of Tumeric and vanilla extract

*Add some ice at the end to make it extra refreshing

Decadent Acai Bowl

This is the perfect bowl if you’re at home over the weekend and want to make something really sweet and filling for breakfast. It took me 20 minutes just to eat it the other day it was so delicious! I really recommend making an acai bowl just once a week, just to practice your decorating skills of course. 😉

Now, if you don’t have a highspeed blender, this recipe is going to be different for you. Don’t fear though, blend all the ingredients and stick it in your freezer for 20m or so before putting the toppings on.

What you’ll need:

-1/2 cup of water. (If you don’t have a highspeed blender, use 1 cup of water)

– 1-2  frozen Bananas

-1/2 cup frozen Strawberries

-1 cup frozen Mango

-1/2 cup frozen Blueberries

-2 dates

-1 lime (juice from)

BLEND (it will be thick, that is good)

Toppings: Fresh strawberries, blueberries, blackberries, bananas, sliced raw almonds, chia seeds, agave/honey drizzle ontop.

✨ Hope you really enjoy these recipes and will use them sometime this week!!! ✨
